Biscuits

  • 1 can 400g chickpeas, rinsed, drained
  • 80 grams honey
  • 165 grams Natural Peanut Butter
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 80 grams choc chips

Recipe's preparation

    Chickpea Biscuits
  1. Place all ingredients in bowl except choc chips. Mix on speed 7 for 10 seconds. Scrape down bowl and repeat until smooth. 

     

     

  2. Add choc chips and turbo twice until combined

  3. With wet hands, roll into balls and place onto lined baking tray. Flatten slightly with a fork. Alternatively, spoon mix onto baking tray. 

  4. Bake in preheated 180 degree oven for approximately 10 minutes until golden. Allow to cool.

Tip

You could substitute honey with rice malt syrup,  choc chips with cacao nibs, replace nut butter with tahini for a dairy free, nut free, fructose free version.

    Have just made these and they are delicious! I left the honey out completely as the choc chips are sweet enough and my very picky son is currently scoffing them with no idea how healthy they are! Big Smile
