Chocolate Brownies

  • 180 grams Salted cooking Butter
  • 330 grams Dark cooking chocolate melts
  • 6 Large Eggs.
  • 200 grams Brown Sugar
  • 1 tsp instant coffee, dissolved in minimal hot water
  • 40 grams cocoa powder
  • 100 grams Self Raising Flour
  • 1/2 pinch cayene pepper
  • 30 grams Buttermilk /milk or sour
  • extra choc chips / bisciut pieces or nuts of choice to top

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat fan forced oven to 180c and line lamington tray or slice tin (approx. 3.5x20x30cm).

    Ensure bowl and blades are completley dry then add Butter and set TM for 2 min at 70 degrees on speed 2.5 (do not place MC on lid). Check butter is completely melted before adding Dark Chocolate and setting to 65 degrees at speed 2.5 for 1min 30sec, if chocolate is not all melted repeat in intervals of 20-30 sec until melted and smooth then turn temp to 0 and mix at speed 2 while adding eggs, increase speed to 2.5 add brown sugar then increase to speed 3 for 15 sec. Add remaining dry ingredients and instant coffee, place MC into lid and mix at speed 4 for 15 sec, scrape down sides of bowl and  add Buttermilk, replace MC and mix at speed 4 for 6 sec.

    Pour batter into tray sprinkle with topping of choice and Bake for 30-45 min (time and temp may vary) brownies are baked when risen in centre and top splits.
