Chocolate Chip Fudge Muffins

  • 130 grams unsalted butter, chopped
  • 100 grams Cadbury dark chocolate
  • 4 eggs, lightly beaten
  • 1/3 Cup caster sugar
  • 2 teaspoons vanilla extract
  • 3/4 Cup plain flour, sifted
  • 1/3 Cup cocoa, sifted
  • 1 1/4 teaspoons baking powder, sifted
  • 1/2 Cup Cadbury milk chocolate baking chips

Recipe's preparation

  1. Preheat oven to 180°C. Place paper or silicon muffin cases into the muffin pan.

  2. Place the chopped chocolate into TM bowl and grate 10 seconds/speed 9. Scrape down the sides of the bowl. Add chopped butter then melt for 1 minute/50°C/speed 3. Cool slightly.

  3. Add the eggs, sugar and vanilla then stir 10 seconds/speed 2. Then add the sifted flour, cocoa and baking powder then mix 15 seconds/speed 2. If not completely mixed through finish off with a spatula.

  4. Add chocolate chips and mix 10 seconds/reverse/speed 3. Finish mixing with a spatula if not mixed through enough. Spoon mixture into prepared muffin pan.

  5. Bake in oven for 18 minutes or until a skewer comes out clean. Cool on a wire rack for 15 minutes.

    These muffins are delicious. I like large muffins so I only made 11 instead of 12. They make a lovely treat, thanks for the recipe.
