Chocolate Meringue Biscuits

  • 180 grams icing sugar
  • 35 grams cocoa powder
  • 1 teaspoon Corn Flour
  • 2 egg whites
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon white vinegar
  • 90 grams choc chips

Recipe's preparation

  1. Preheat oven to 180.

    Place icing sugar, cocoa and corn flour into jug.

    Turbo two times, to sift and combine.

    Add egg whites and mix 5 seconds/speed 3.

    Add in the vanilla essence and vinegar and combine 5 seconds/speed 3. 

    Scrape down sides of bowl and repeat if necessary.

    Add in Choc Chips and mix 5 seconds/speed 3/.

    Pour teaspoons of mixture onto a lined baking tray and bake for 15 minutes. 

    Be sure to allow plenty of room as they do grow and spread.

    Allow to cool on the trays.

The mixture is liquid, but will rise and firm up in the oven. 

Only make them 1-2tsps in size otherwise they won't cook properly.

Ensure you let them cool on the trays otherwise they will stick and break apart.

    I have made this... with exact amounts of recipe ingredients, but it is certainly not liquid!!! It's still dry, like breadcrumbs.
    Was I supposed to whisk the egg whites prior to adding them? Recipe doesn't say to. So I just seperated egg whites and tipped them in. Puzzled

    UPDATE... I whisked another couple of egg whites and added to the dry crumbed mix (mentioned above) and that worked....
    I have marked on my recipe copy to whisk the egg whites first as the 1st step!!!

    UPDATE #2.... 15 minutes in the oven at 180deg... they are burnt!!!! Cry

    Will have to buy more ingredients and try again. They look sooooo yummy.

    These are fabulous! I wasn't expecting much as they are just liquid when you put them into the oven, but they puff up beautifully and taste delicious.

    i had just made ice cream so I doubled the recipe to use up my 4 leftover egg Whites and it worked out really well.

    Super  quick and tasty. I was looking for a way to use up my leftover egg whites and found this!

    Fairly sweet though. I milled 170g of raw sugar prior to step 1 and could easily reduce further. I used a mix of dark and milk chips  (because one pack was nearly empty) thanks for sharing
