Chocolate Weetbix Slice

Ingredients

  • 170 g Weetbix
  • 200 g Butter
  • 30 g cocoa
  • 170 g brown sugar
  • 40 g Coconut
  • 1 egg

Recipe's preparation

  1. Place weetbix into mixing bowl and crush 5 sec/speed 9.  Remove from bowl and set aside. 2.  Place butter into mixing bowl and heat 2 min/50 C/speed 1 or until melted. 3.  Add weetbix, cocoa, brown sugar, coconut and egg and combine 30 sec/speed 4. 4.  Press into a lined slice tin.  Bake in moderate oven for 15-20 minutes until firm to touch.Cool and ice with chocolate icing. To make chocolate icing: 5.  Mix 2 cups icing sugar, 2 Tbs cooca, 1 Tbs soft butter and enough boiling water to give a smooth consistency. 6.  Top with sprinkles if desired.

    Really love this recipe, I used half the amount of sugar and still tasted amazing and Lao added a chocolate layer to the top instead of icing. Tasted just like how my mum made it when I was young and now my children love it too. Thank you for this recipe

    I found this to be super crumbly and quite dry although that may have been my own fault as I reduced the butter to 160 as per other comments, and increased the cooking time to 25mins as it still seemed quite oily at 20mins. Probably should've stuck to cooking time as I am guessing the butter would're reabsorbed as it cooled which would've kept it moist. Will try again another time.

    Easy lunch box slice. I reduced sugar to 100g and butter to 150g and just added about 50g water to make up for reduced butter. Cooked for 20mins in 180deg gas. If it's too oily it might not be cooked enough (I checked at 15mins and it looked quite oily on top).

    Great to have something to make quickly with all the ingredients at hand. Very yummy. Funny story- was cooking with toddler and baby while getting ready for childcare and hence forgot to add crushed weetbix!!!! The result was actually really yummy but I will remix the weetbix in and see how it goes. Typical of me!

    Not sure if I did something wrong but I found that it had way too much butter - I had to use absorbent paper to try and soak up some of the excess before I put the slice in the oven. We reduced the sugar to 100g which suited our taste buds. The final product still made the kids happy but I would reduce the amount of butter considerably if I were to try this again.

    We LOVE this recipe but the original sugar amount is most definitely far too sweet- we use 85 grams here with no problems, and finish with a nice buttercream icing.  This is one of our favourite slices- my son BEGS me to make it for his school functions every time. Thank you for sharing!

    I followed others recommendations and reduced the sugar in the slice to 100g and I was glad I did this because once you put the icing ontop it is sweet. My only negative feedback is that the icing ingredients should also be listed up the top. It wasn't until I started making the slice that I realised it required icing aswell and this then made the process take longer than I had anticipated & allowed for. None the less it all got eaten.

    Very quick and easy, comes out nice and moist but even though I reduced the sugar content, it was still too sweet. Will make it again but will reduce to 100g sugar next time and see how that goes.
