Ingredients

Chocolate Zuchini Muffins

  • 220 g zucchini, in large chunks
  • 3 tablespoons Chocolate melts
  • 80 g Butter, softened
  • 160 g raw sugar
  • 80 g white sugar
  • 2 eggs
  • 1 teaspoons vanilla essence
  • 3 tablespoons yoghurt
  • 220 g plain flour
  • 3 tablespoons cocoa powder
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons ground cinnamon, or mixed spice
  • 1/2 teaspoons salt

Recipe's preparation

  1. Grate zucchini, 5 sec on speed 4.5 or 5, until finely grated. Transfer onto a plate or bowl.

    Chop choc melts 6 sec on sp 6, or until they are fine for your liking (some people like them more chunky). Transfer to the plate with the zucchini.

    Beat softened butter with sugars, sp 4 for 1 minute, or until soft and creamy (at least that's the goal. Didn't work for me, so I just continued and it also worked.)

    With the MC off and running at speed 4, bit by bit add the eggs, vanilla, yoghurt and spice (ground cinnnamon or mixed spice). Scrape down and mix a little bit more on sp 4.

    Add about 70g of the flour and mix 5 s on sp 4, then add zucchini and choc chips and mix another 5 s / sp 4 / Counter-clockwise operation"Counter-clockwise operation" .

    Add the remaining flour, bicarb soda, cocoa and salt and mix on sp 4 until just combined, about 5 seconds. Do not overmix. Scrape sides down and mix another 3 sec / sp 4.

    Preheat oven to 160 fan (or 180 conventional).

    Fill about 20 muffin cases with the batter, put on the middle rack in the oven and bake for about 30-35 minutes, or until baked through (test with a skewer, and as soon as there is no more batter sticking to it when poked into the middle, take them out of the oven).

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
