CINNAMON PUMPKIN MINI MUFFINS

Ingredients

24 piece(s)

MUFFINS

  • 1 litre Water (for steaming)
  • 220 grams Pumpkin (any variety), Cubed ( 2 cm )
  • 1/2 teaspoon Apple Cider Viniger
  • 6 tablespoons Non-Dairy Milk
  • 3 teaspoons apple sauce, Unsweetened
  • 2 tablespoons brown sugar
  • 2 tablespoons Nuttelex, Melted
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger, Ground
  • 1/4 teaspoon Nutmeg, Ground
  • 1/2 teaspoon salt
  • 140 grams all purpose flour
  • 60 grams Whole Wheat Cake Flour, See Note
  • 55 grams raw sugar

CINNAMON SUGAR

  • 4 tablespoons Nuttelex, Melted
  • 80 grams raw sugar
  • 1 teaspoon cinnamon

Recipe's preparation

    For The Muffins
  1. Place Cubed Pumpkin in Varoma and steam on Varoma/20min/Speed 1

  2. Empty TM Bowl of water and transfer the steamed Pumpkin from the Varoma to the TM Bowl 

  3. Puree the Pumpkin by slowly brining up to Speed 4/20 sec

  4. Add all the wet ingredients to the TM Bowl; Apple Cider Vinegar, Milk, Apple Sauce, Melted Nuttelex plus the Brown and Raw Sugar.

  5. Combine Speed 2/5 sec

  6. Sift in dry ingredients; Baking Powder, Baking Soda, Salt, Spices and Flours

  7. Gently Combine Speed 2/20 sec

  8. Set oven to 350F

    Place mixture into a piping bag (or zip lock bag with corner cut) and pipe mixture into the muffin trays.

    Bake at 350F for 10-12min or until they gently spring back when touched.

    Allow to cool for 10-15min

  9. For The Cinnamon Sugar
  10. Place Cinnamon and Sugar in a zip lock bag.

    Dip each muffin in the Melted Nuttelex and then place in the bag and shake until coated.
