      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Steps
  1. Preheat oven to 180C. Lightly grease a LARGE 12 muffin tin with coconut oil and set aside. (This recipe makes rather large muffins).

    Place fresh mango into TM and chop 3 seconds/sp4. Set aside.

    In the bowl, place flour, sugar, eggs and milk and mix 10seconds/sp9. Add oil and reserved mango cheeks and mix 15 seconds/speed 3. Clean down sides with spatula and add passionfruit. Mix again 5 seconds/speed 1, or until passionfruit is incorporated. You may have to give it a gentle stir with the spatula!

    Spoon mixture evenly into the prepared tin and sprinkle a little extra coconut on top.

    Bake for 15-20mins until a skewer inserted into the biggest muffin comes out clean.

    Allow to cool. Remove by running a knife around the edge and lifting the muffin out carefully. Store in the fridge in a sealed container.

Tip

Line the muffin tray with individual paper cases for ease of removal. These muffins are deliciously light and moist and tend to be stubborn.
