  • 4 large carrots, cut into chunks
  • 3 eggs
  • 1 tsp vanilla essence
  • 1 Cup pecans
  • 2.5 Cups almond meal
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup coconut milk

Recipe's preparation

  1. 1) Heat oven to 180 degrees. Line muffin tin w/ baking cups or use silicone cups.

     

    2) Add carrots to TMX bowl. Chop on speed 6 for 5 seconds. 

     

    3) Add pecans to TMX bowl. Chop speed 5 for 3 seconds. 

     

    4) Add eggs, coconut milk, almond meal, vanilla, nutmeg, baking soda, salt and stevia if using. Mix on speed 4, reverse, until well combined.

     

    5) Fill baking cups and bake for 35 minutes. Top with shredded coconut.
