  • 320 grams raw sugar
  • 160 grams coconut oil
  • 1 teaspoon vanilla essence+1 vanilla bean OR 1 teaspoon Vanilla Bean paste
  • 240 grams Coconut cream (or 1 can Ayam brand)
  • 4 eggs
  • 430 grams Self Raising Flour (or make your own from EDC)
  • 1 teaspoon Baking Powder (make your own EDC)
  • 1 pinch salt

Recipe's preparation

    Coconut Cupcakes
  1. This recipe is based on the recipe from Thermomix 2012 Food Lovers Calendar, but made completely dairy free.

    Preheat oven to 180C.  Line 2 x 12 hole muffin tins with patty cases.

  2. Place sugar and vanilla bean (if using) in TM Bowl.  Mill for 15 Seconds, Speed 10

  3. Add coconut oil and mix 10 seconds on Speed 4 (my oil was solidified because of the cold and worked well!)

  4. Add remaining ingredients and mix for 20 Seconds on Speed 7 or until combined

  5. Spoon mixture into patty cases and bake for approx 20 or so minutes until golden.  Allow to cool before icing.

I just sprinkled with homemade icing sugar.

    Absolutely gorgeous! I have been searching for a delicious dairy free cupcake recipe for the whole family and these are awesome, I did it it mini muffin size and got about 50 and they took about 16minutes to cook!

    Fantastic! I cooked them in the Veroma using the technique from the recipe:

    'Lemon cupcakes with citrus syrup by Thermomix Australia'

    The second time I made them I put 250 grams of sugar in them and found them to suit me better.

    Absolutely delicious! So easy to make. I took some to work, mainly for a lady who is dairy free, and everyone requested more tmrc_emoticons.) My 14 year old son does not like coconut, so I didn't tell him at first that it was in there. He tried the cupcake, and demolished half the batch! Thanks heaps for sharing your recipe.
