Coconut Loaf

  • 1 lemon zested
  • 60 grams Coconut Flour
  • 70 grams coconut desiccated
  • 3 eggs
  • 300 grams natural yoghurt
  • 50 grams Maple syrup
  • 5 grams vanilla essence
  • 5 grams bicarbonate soda
  • pinch salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Coconut Loaf
  1. Pre heat oven 175 degrees

    Line loaf tin with baking paper

    Zest lemon - peel a lemon no pith grate 20 seconds speed 7

    add coconut flour and desiccated coconut to lemon zest mix 5 seconds speed 4

    scrape bowl

    with blades turning add the eggs and mix for approx 30 seconds

    add yoghurt and maple syrup mix 10 seconds speed 4

    add remaining ingredients vanilla essences, bicarbonate soda and salt mix 10 seconds speed 4 

    add berries and mix 3 seconds speed 1 Counter-clockwise operation

    bake in the oven 35 mintues and then cover with foil and cook for a further 10 minutes

Tip

Coconut flour and yoghurt can be made in the thermomix

if you want dairy free option make coconut yoghurt (recipe in quirky cooking)
