Coffee Banana Cake with Coffee Buttercream Frosting

  • 150g castor sugar
  • 150g butter unsulted (at room temp)
  • 1 cup sour cream
  • 2 eggs
  • 3 level teaspoons vanilla essence
  • 350g ripe bananas, mashed, ( you need about 4 bananas(
  • 280g plain flour
  • 1 1/2 level teaspoons baking soda
  • 1/2 level teaspoons salt, fine
  • 2 level teaspoons instant granulated coffee, (I used Nescafe Gold)
  • 2 level teaspoons hot water

Coffee Buttercream Frosting

  • 100g Butter (unsalted) at room temp
  • 200g soft icing sugar, Use store bought soft icing sugar
  • 1 1/2 level teaspoons instant granulated coffee, I used Nescafe Gold
  • 1/2 level teaspoons vanilla essence

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake batter and Baking
  1. *Preheat the oven at 180c f/f
    *Grease and line with baking paper a 23cm springform cake pan
    (Make sure the pan is well lined so no batter leaks out during cooking)
    *In a small bowl add 2 tsp instant granulated coffee and 2 tsp hot water, mix well sobthe coffee granules disolve, and set aside.
  2. Add softened butter and sugar to the mixing bowl and
    Mix 5 sec / speed 5
    Scrape the sides of the bowl
  3. Add sour cream, eggs and vanilla essence to the mixing bowl and
    Mix 4 sec speed 5.
    Scrape the sides of the mixing bowl
  4. Add mashed bananas to the mixing bowl and Mix 3 sec / speed 5.
    Scrape the sides of the mixing bowl.
  5. Add flour, baking soda, salt and the reserved coffee and hot water mixture. Mix 5 sec / speed 5, scrape and repeat Mix 5 sec / speed 5.
    The batter should be nice smooth consistency.
  6. Pour the batter into earlier prepared cake tin and bake in pre-heated oven at 180c ff for 35 to 40 min.
  7. Take the cake out the oven, let cool in the tin about 10min then take out and place on a wire rack to completely cool .
    If you are in a hurry you can always let the cake cool on the kitchen bench for at least half an hour then place in the fridge for quicker cooling off, like I do.
  8. While the cake is cooking, wash and dry the mixing bowl, if you only have the one otherwise use your second bowl and start preparing the coffee buttercream frosting.
    * In a small bowl add 1 1/2 tsp Instant granulated coffee, 1/2 tsp hot water and 1/2 tsp vanilla essence, mix well until coffee granules disolve & the mixture is smooth and place aside.
  9. Frosting
  10. Add softened unsalted butter (at toom temp) to the mixing bowl and Beat 10 sec / speed 7.
    Scrape the sides of the mixing bowl
  11. Add soft icing sugar and the earlier prepared coffee/water/vanila mixture and
    Mix 20 sec / speed 5
    Scrape the sides of the mixing bowl.
  12. Insert the butterfly whisk and whisk 20 sec / speed 4.
    This will form the buttercream frosting
  13. Remove the butterfly whisk from the mixing bowl, empty the frosting into a bowl, cover with plastic wrap and place in the fridge until ready to use.
    Once you are ready to use the frosting, take out the fridge and bring it to room temperature before use.
  14. Spread the frosting on to the cake, decorate per your choice and serve.
