



Ingredients
Loaf
- 150 g Pitted dates cut in half
- 2 Large Overripe Bananas, apx 250g
- 120 g unsalted butter at room temperature. cut into cubes
- 190 g SR flour
- 1/2 teaspoon baking soda
- 2 teaspoon vanilla essence
- 50 g Milk of choice
- 2 eggs

- 1. Preheat the Oven @ 160c fan forced oven
2. Prepare the baking tin. Scranch the baking paper into ball, open up and line into slightly greased loaf tin. Set asaide.
3.Add the dates into the mixing and Blitz 8 sec, Speed 9 . Scrape around the mixing bowl.
4. Add the remaining ingredients into the mixing bowl and Mix 25 sec / speed 5, Scrape around the mixing bowl and Mix 10 sec / speed 5
6. Pour the batter into the loaf tin and bake in the pre-heated oven for 50 to 60 min or until cooked.
7. Let cool in the tin 5 min then empty the loaf onto the wire rack to cool completely before slicing and serving.

Tip
Sliced loaf can be stored in the freezer individually wrapped in baking paper or in ziplock bags.
Defrost at room temp and heat up in the microwave or toaster.
Instead of baking the loaf you can also bake 12 muffins using the silicone muffin tray that doesn't need to be greased or can use metal muffin tray with paper cup inserts.
Bake for 25 min.
