  • 1 package Butternut Snap biscuits (whole)
  • 60 g melted butter
  • 250 g Cream Cheese (1pkt)
  • 1 can sweetened condensed milk
  • 1 Lemon (juice only)
  • 1/4 teaspoon Organic Vanilla Paste

Recipe's preparation

    Easiest Cheesecake ever (gelatine free)
  1. Place biscuits in bowl and mix - speed 7 for 15 seconds

     

    2. Add melted butter and mix 5 seconds

     

    3. Press into springform pans (I use 2 smaller ones but 1 large is also fine) and refrigerate whilst making filling

     

    Clean and dry TM bowl

     

    1. Place cream cheese, whole tin of sweetened condensed milk, vanilla paste and juice of lemon into bowl and mix - speed 8 - 20 seconds.

     

    2. Pour into prepared tins and regrigerate 3 hours

     

    Serving suggestions :

    * Grated chocolate

    * Raspberry Coulis

    * Icing Sugar dusting

Tip

* Can delete lemon juice and add melted chocolate, berry of choice or other flavouring as desired.

    This was easy to make, but we couldn't get it to set. 

    It was a really humid day when we made it though. 

    We even put it in the freezer, but as soon as you let it defrost a little it became runny. 

    We ended up discarding the base and using the topping like ice cream. 

    Was really yummy, even if it wasn't what we originally planned it to be tmrc_emoticons.)

    It worked for me and was delish! I used gingernut biscuits, not sure if that's the same as what was meant but worked really well. I did put in the lemon rind to give it more zing and added it on top too for decoration. Too easytmrc_emoticons.)

    It is definitely a quick throw together but unfortunately it has been in the fridge for 18 hours and still not set even though I added a teaspoon of gelatin as I needed it in 4 hours. I will try it again with more gelatin as it is so easy to whip up with kids at your legs.
