  • 180 g vegetable oil
  • 2 eggs
  • Zest 1 lemon
  • 20 g lemon juice
  • 280 g natural or greek yoghurt
  • 280 g sugar
  • 300 g self-raising flour

Recipe's preparation

    Easiest lemon cake ever
  1. Place sugar and lemon zest in the Thermomix bowl and mill for 10 seconds on speed9

  2. Add remaining ingredients and mix on speed 4 for 10 seconds

    Place in ring cake tin and bake at 180C for 35mins

  3. Easiest lemon cake ever Syrup
  4. Place sugar and lemon in thermomix bowl and cook for 3mins at 80deg on Gentle stir setting

     

  5. While cake is still warm place on plate and pour syrup over.

Tip

This cake is so versitile, you can make it with orange instead of lemon or even chocolate by adding 40g of cocoa instead of lemon.

    Really easy and fab recipe. I reduced the sugar to 180grams after reading previous comments and added a teaspoon of vanilla extract. It's sweet enough for us. I used 180 grams of melted butter as I had no mild oil in the house.
    I cooked in a muffin tin on 180 degrees for 18 minutes. I brushed the tops with warm blood orange marmalade as I had some needing to be used up.

    Cut down sugar by 100g, then rellised didn't have enough oil by about 100 g and yoghurt by about the same... so cut down on flour by 60g and cake still turned out ok.

    Quick, easy and very tasty. I halved the sugar too. Greased a ring tin and dusted it with flour, baked for the exact time, and it came out of the tin very easily. I had plenty of home made kefir so I used that instead of the yoghurt, worked very well. Thanks for sharing Smile

    6/6/19. I’ve made this recipe several times now and had good results putting mixture into muffins.

    Like others I nearly forgot the oil (because of the ordering of the ingredients I think) - had already started to put it in the tin when I remembered. I also reduced the sugar and didn’t bother with the syrup. It was a great hit. My partner, who doesn’t like yoghurt, loved it. Lovely and moist.

    What a fabulous recipe this is! Everything that's good about a Thermomix: fast, easy and absolutely delicious. I have made this lots of times and people always ask me for the recipe. I added a punnet of blueberries to it today (stirred them in at the end) and it was even more delicious if that's possible. I grease my tin and dust it with flour to make sure it doesn't stick. But today I did get it stuck because I left it in the tin for a few hours to take to work, planning to turn it out there. Served it directly from the tin - still a success.

    Easy to make, flavoursome cake, although mine did take a good 15 minutes longer to cook than stated in recipe (could have something to do with using a silicone bundt cake tin though). I also initially forgot to add yoghurt but realised before it was too late and managed to salvage it. It would be helpful if ingredients were listed in their order of use as saves going back and forth through list to make sure you haven't left anything out. I, too, just mixed the syrup ingredients briefly and spooned over warm cake so that I was left with a crunchy topping.

    Beautiful and fluffy cake. I had to cook for a good 20 minutes longer than recommended after testing with a skewer a few times. I poured on about 1/2 of the lemon syrup before stopping (it looked like too much and was just running off) - but next time I will repeat after the first lot has soaked in tmrc_emoticons.) it would have been even better if I had done that! Thanks!

    So easy. Reduced sugar amount to half and added a bit of honey, also used coconut oil instead of vegetale oil. Was still quite sweet, will reduce sugar to a quarter next time. Beautiful cake.

    I have just made this & it tastes delicous however I managed to get the top stuck in the ring tin despite making sure it was well greased so its looks a complete mess but nothing a bit fo cream wont cover!. I think i will let it cool more completely next time, then for the syrup poke holes (with a small skewer) into the cake & pour it over the cake. I also added a large spoonful of honey to the syrup and simply microwaved it for 30 seconds to dissolve everything rather than back into thermie.

    Actually that's really true - I didn't think to write that in my review.  I made mine in a ringed silicone tin with the slice-shaped pattern, and it came out in one piece with not one bit left behind and I was so pleasantly surprised.  Makes it look fantastic!

    Easy cake to make.  I didn't have SR flour so used normal flour with 2 teaspoons baking powder and a pinch of salt.  I also used coconut oil instead and it turned out fine.
