Easy Date and Coconut Bars

  • 160 grams dates pitted (fresh)
  • 220 grams Butter, chopped
  • 100 grams golden syrup
  • 180 grams brown sugar
  • 60 grams Shredded coconut
  • 100 grams rolled oats
  • 40 grams Flaxseeds (Linseeds)
  • 150 grams SR flour

Recipe's preparation

  1. Preheat oven to 160 degrees.


    Grease and line an 18 x 28cm (approx.) slice tin.


    Put dates into Thermomix bowl and chop for 5 seconds on speed 7. Set aside.


    Without cleaning bowl add cubed butter and golden syrup.  Melt for 3-4 minutes at 50 degrees, speed 2 until melted.


    Add to bowl the pre-chopped dates, brown sugar, coconut, oats, linseeds and flour.  Mix for 30 seconds, Reverse, speed 3 until well combined, scrapping down sides of bowl to ensure all dry ingredients are incorporated. Mix for another 4-5 seconds if necessary.


    Pour mixture into the prepared tin and bake for 40 minutes, using a second piece of baking paper to help smooth the mixture, remove before baking.


    Allow to cool before slicing into bars. Store in an airtight container.

    SOOOOO delicious!  Having to use all my willpower to stay seated in the couch and not go get another piece!  I didn't have enough dates, so made up the weight with apricots, still delicious!  Will make this one regularly!

    Still a firm favourite but have reduced the sugar to only 100gr in total (half coconut sugar) and changed golden to rice malt syrup and still divine! Thank you tmrc_emoticons.)

    Omg divine! Made this for my mum as a treat and it is beautiful...like a sticky date puddi and an anzac biscuit rolled into one! Very sweet but yummy!
