Easiest lemon cake ever
- Zest 1 lemon
- 180 g sugar
- 280 g natural or greek yoghurt
- 180 g sugar
- 300 g self-raising flour
- 2 eggs
- 160 g vegetable oil
- 40 g Lemon juice (approx 1 lemon)
Syrup (optional)
- 120 g sugar
- 60 g lemon juice

Recipe's preparation
- Preheat oven to 180 degrees (fan forced). Grease ring/bundt tin.
Place sugar and lemon zest in the Thermomix bowl and mill for 10 seconds on speed 9 - Add remaining ingredients and mix on speed 4 for 10 seconds. Scrape down bowl with spatula and repeat.
Place in ring cake tin and bake at 180C for 35mins. Cool in tin for 10 mins before removing. - Place sugar and lemon in thermomix bowl and cook for 5mins at 105 deg on "Gentle stir setting"
- While cake is still warm place on plate and pour syrup over.
