Easy Lemon Yoghurt Cake

  • 1 zest of lemon
  • 350 grams raw sugar
  • 2 eggs
  • 200 grams Rice Bran Oil
  • 280 grams yoghurt
  • 1/2 teaspoon salt
  • 35 grams lemon juice
  • 300 grams SR flour

Recipe's preparation

  1. Preheat oven to 180°C (160°C for fan forced)

    Grease and flour or line 2 x 20cm round tins or 1 loaf tin

    Put 200g sugar and zest into TM bowl and mill for 10 seconds on speed 8 then set aside. Put remaining sugar into bown and process for 10 seconds speed 8.

    Return reserved sugar to bowl and add eggs, yoghurt, oil, lemon juice, and salt then combine for 5 seconds on speed 5.Add flour and process for 2-3 seconds on speed 5 to just combine.

    Pour into prepared pan/s and bake until a skewer comes out clean. This will be aproximately 35 mins for 2 round tins or up to an hour for loaf tin.
