  • 220 grams carrot roughly chopped
  • 1 green apple cut to quarters
  • 100 grams walnuts
  • 3 eggs
  • 200 grams coconut oil
  • 1 teaspoon vanilla extract
  • 250 grams raw sugar
  • 300 grams plain flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 150 grams sultanas
  • 80 grams Desiccated Coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Put carrot, green apple and walnuts  to bowl and chop 3s/sp5 and set aside.

     

    Put eggs, cocconut oil, vanilla extract and mix 5s/sp3.

     

    Add rest of the ingredients and add reserved chopped carrot with apple and walnuts and mix for about 40 sec/Counter-clockwise operation/sp1 helping with the use of spatula.

    Spread the mixture to lined with baking paper 20x30cm baking tin.

     

    Bake about 30 min on 180C or until cooked.

Tip

Cut to bar pieces next day of after cooled down. Freeze well.

    I made this today with a few adaptations -- reduced coconut oil to 50g, sugar to 170g, used raisins instead of sultanas and wholemeal flour. I also cooked it more as a cake, rather than a slice. It came out super well and is easily sweet enough for me.

    I did find I needed to stir it for a quite a bit longer and on higher speed (up to 2), plus the batter was very sticky, doubtless due to my tinkering. But it worked nonetheless. Thanks for the recipe. It feels healthier than chocolate cake. tmrc_emoticons.-)

    I substituted dates for the sultanas and reduced the sugar to 200g. Really delicious.
