Espresso Chocolate Cake

Ingredients

Cake

  • 250 grams Butter, chopped
  • 200 grams dark chocolate, broken into pieces
  • 370 grams Strong Coffee
  • 440 grams caster sugar
  • 230 grams self-rasing flour
  • 10 grams cacao powder, (or 25 grams cocoa powder)
  • 2 eggs

Recipe's preparation

    Cake
  1. Pre-heat oven to 180' (or 160' fan forced), grease a deep 25cm round pan and line the base with baking paper

  2. Melt butter, chocolate and coffee 4mins/50'/1 or until melted

  3. Add sugar and mix 1min/50/1 to dissolve

  4. Add flour and cacao and mix 5sec/4

  5. Add eggs and mix 10sec/4

  6. Pour mixture into prepared pan and bake for 1 hour until cake is firm and middle is done when tested. Cool cake in pan

    I halved the recipe. And I exchanged the coffee with orange juice. It's so bloody delicious. I cooked it in smaller tins so it cooked even and quicker.

    Judging from other recipes, I think the 'strong coffee' is liquid + coffee = strong coffee. I tried a similar recipe and that's what I did. I hope it works better if you give it another go.

  • Very dense mixture, cooked

    Very dense mixture, cooked for time stated and skewer still wet. Put back in for another 5 mins and all looked good, until I took it out and the whole middle collapsed tmrc_emoticons.( Sadly was then very dry & hard. A bit like a heavy brownie.

    I wasn't sure if coffee needed to be dissolved or not, so only put fine ground coffee in.  Any suggestions for this to be moist and not collapse? ...was really excited about this one

    Lovely flavour. Wasn't sure if coffee was mean to be espresso, instant, or other. I made the fatal error of taking it out of the tin too early and it ended up a bit of a smash, but flavour and texture is lovely!! tmrc_emoticons.p
