Fluffy Buttermilk Scones

  • 30 grams raw sugar
  • 60 grams unsalted butter
  • 520 grams SR flour, plus extra for dusting
  • pinch of salt
  • 350 grams buttermilk

Recipe's preparation

    Method
  1. Preheat oven 210 degrees or 205 fan forced

    Place sugar in tm bowl and mill 10sec / speed 8. Scrape down

    Add butter salt and flour mix 15 sec / speed 6

    Add buttermilk mix 6 sec / speed 6 then knead Dough mode for 25 sec

    turn out onto floured thermomat, dust with flour and bring together into a round 2.5 cm thick. Using a cutter,  cut out scones until no dough is left.

    Place onto tray with baking paper and bake for 15-20 min or until light golden in colour

Tip

Can brush the top with a milk wash.

    Actually tried another butter milk scone recipe last week which was a disappointment. Found your recipe Thermiefanatic and made them today to use the remaining butter milk. I added some chopped dates but they ended up as specks lol. Texture was wonderful - light and fluffy as promised. Recipe is now in my favourites folder. Rate them 5 out of 5.

    Just made these this afternoon for friends who came over for a coffee.  They gave it an eleven out of ten.

    very light and fluffy (just as promised). Going in my tried and tested file they were lovely,
