- 3 eggs
- 100 g sugar
- 75 g Cornflour
- 1 tablespoon plain flour
- ½ teaspoon cream of tartar
- ½ teaspoon soda
- ½ teaspoon cinnamon
- 1 teaspoon cocoa
- 1 tablespoon Warm Syrup

Recipe's preparation
Preheat Oven to 180 degrees C. Grease and paper line two sandwich tins or a lamington tray.
Insert Butterfly and beat eggs for 3-5 mins on speed 4. Add sugar and beat for 2 mins on speed 3.
Place syrup into microwave and heat for 10 seconds.
Remove butterfly. Add cornflour, plain flour, cream of tartar, soda, cinnamon, cocoa and warmed syrup, mix in with spatula then combine on speed 1.5.
Bake in sandwich tins for 15 mins.
Sandwich together with jam and cream and dust top of cake with icing sugar.

Tip
Can also be made in a lamington tray, cut in half and sandwich together with jam and cream.
