Ingredients

  • 180 g dried figs
  • 180 g Meedjol Dates, Pitted
  • 1 tsp Vanilla Paste
  • 1 portions banana, Ripe is better
  • 100 g orange juice, I use freshly squeezed, otherwise Nudie is a good option
  • 1 portions egg
  • 130 g Pepita Seeds
  • 130 g sunflower seeds
  • 60 g pecans
  • 70 g dried cranberries, I use 50% less sugar version
  • 15 g Shredded coconut
  • 40 g sesame seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp Bi-carb soda
  • 60 g GF Flour, works well with regular plain flour too

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. 1. Preheat oven to 160 degrees fan force (or 180 regular)
    2. Grease a 12x muffin tray (no need for muffin papers)
    3. Place figs, 130g dates, vanilla, banana, orange juice, egg in mixing bowl
    4. Process for 30 seconds on blend mode (speed 8 )
    5. Scrape down sides of mixing bowl (repeat if needed)
    6. Add pepita, sunflower, pecans, cranberries, coconut, sesame, remaining 50g of dates, cinnamon, bicarb, baking powder and flour (all remaining ingredients)
    7. Mix for 20 seconds on speed 4
    8. Scrape down sides of mixing bowl
    9. repeat - 20 seconds, speed 4
    10. Place mixture into prepared muffin tray
    11. Bake for 20mins (check) and then bake for another 5-10mins if needed. They should look golden coloured on the top like in the picture above.
