Fudgy chocolate muffins (Healthier)

  • 100 g pitted dates
  • 1 banana, approx 150 g, cut into pieces
  • 100 g extra virgin olive oil
  • 100 g yoghurt
  • 40 g Milk
  • 2 eggs
  • 50 g honey
  • 40 g cocoa powder, 70% cocoa
  • 110 g plain flour
  • 1.5 tsp baking powder
  • 80 g chocolate chips

Recipe's preparation

  1. Pre-heat oven to 180 degrees and line a 12 hole muffin tray with muffin cases.
  2. Place dates, banana, oil, yoghurt, milk, eggs, honey and cocoa powder into mixing bowl and mix 5 sec/speed 8.
  3. Add flour, baking powder and chocolate chips and mix 5 sec/speed 4. Transfer into muffin case and bake 20 minutes or until a skewer inserted into the muffin centre comes out clean.
