Gingerbread Men

  • 120 grams Butter
  • 100 grams brown sugar
  • 130 grams golden syrup
  • 1 egg yolk
  • 1 tablespoon ground ginger
  • 2 teaspoon cinnamon
  • 1.5 level teaspoon mixed spice
  • 1 teaspoon bicarb soda
  • 370 grams plain flour

Recipe's preparation

    For Gingerbread Men
  1. Place butter, sugar, syrup and spices in TM bowl. Mix 5 mins, 50 degrees, speed 2.
  2. Add egg yolk, mix 3 seconds, speed 3.
  3. Add flour and bicarb soda and mix 10 seconds, speed 5.

    Knead 2 mins on interval speed to form a soft dough.
  4. Press dough into a disc and cover with cling wrap to rest in fridge 30 mins.
  5. Roll out dough on floured surface to 4mm thickness and cut out shapes.
  6. Bake 180 degrees, 10 mins until golden.
  7. For Icing
  8. Using butterfly, add egg white. Mix 3 mins, 50 degrees speed 4.
  9. Add icing sugar though hole at speed 4.
  10. Add to zip lock bag and pipe onto men when cool.

Can use dough to form any shape. Christmas stars etc

    I've made this recipe several times now and the most recent I decided to double the ingredients.
    1) Thermi struggled with volume....therefore don't recommend.

    2) Left in fridge overnight to rest, whereby the mixture was quite hard when I wanted to roll & bake. Because of my impatience I popped the dough into the microwave to soften. This changed the texture and rolling was not as smooth.... therefore don't recommend.

    3) Any left over icing, pop into a zip lock bag and freeze for your next delicious batch, keeps well.
