Gluten, Dairy and Sugar Free Banana Bread

Ingredients

8 portion(s)

Banana Bread

  • 8 dates, pitted
  • 3 banana's
  • 1 tsp vanilla
  • 1/2 Cup Coconut oil
  • 1 tsp bicarb soda or gluten free baking powder
  • 1 Cup Shredded Coconut (no additives)
  • 1 cup brown rice flour
  • 4 eggs

Recipe's preparation

  1. 1. preheat oven to 180
    2. in your thermomix bowl add coconut oil with vanilla, eggs, bananas, dates and bicarb before adding coconut and brown rice flour and mix together for 45sec on speed 5
    3. pour mix into a lined baking tin and bake for approximately 45-60min or test the middle with a skewer and if comes out clean remove from oven 4. allow to cool in pan for 10min and ENJOY!

    I have been making this recipe for some time now and we all just love it. It has been a go to recipe that can be sliced and toasted for breakfast topped with nana ice cream and berries, slices for school lunch boxes and afternoon snack. It is moist and very delicious.
