GF ALMOND BISCOTTI

  • 150 g almond meal, (or if milling your own, use the same amount of raw almonds)
  • 2 eggs
  • 2 tbsp Butter, softened
  • 1 tsp vanilla
  • 2 tbsp Maple syrup
  • 220 g Gluten Free Flour Mix
  • 1 tsp baking powder
  • 1/2 tsp xanthum gum
  • 25 g honey
  • 50 g Nuts of choice, I prefer pistachio!!

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 deg.

    If milling your own almonds, place almonds into bowl, process for 6 seconds, Speed 9 - set meal aside

    Add all wet ingredients to bowl, mix for 3 seconds, Speed 5

    Add rest of the ingredients and mix for 10 seconds, Speed 7.  Check mixture has combined, if not, scrape down and repeat

    Turn out mixture onto Thermomat and separate into two.  Form each half into a log and place on a baking tray with baking paper (or Oven mat) and bake at 180 deg for 25 minutes

    Remove logs from oven and allow to cool to the touch

    Lower oven temp to 140 deg

    Slice logs carefully into 1cm thick slices.  Lay slices flat on baking tray and bake at 140 deg for 10 mins, turn slices over and bake for a further 10 mins

Tip

Xanthum gum is widely available in health stores and most supermarkets.  It is an essential part to the recipe as it is what helps hold the dough together.

You can try and slice the biscotti thinner if you like, however gluten free baking is quite different to traditional baking so the biscotti may break if thinner.
