  • 300 g white sugar, (I often halve this)
  • 110 g blanched almond meal
  • 115 g Gluten free plain flour
  • 70 g cocoa powder
  • 1 1/2 tsp GF baking powder
  • 1 1/2 tsp bicarbonate of soda
  • 1 tsp salt
  • 125 g oil, rice bran
  • 2 eggs
  • 250 g Milk
  • 1 1/2 tsp Vanilla Bean Paste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Grease and line a 9" round spring-form cake tin.
  2. Place white sugar, blanched almond meal, gluten free plain flour, cocoa powder, GF baking powder, bicarbonate of soda and salt into thermomix. Combine 10 sec/speed 6
  3. Weigh in the oil, eggs, milk and vanilla bean paste, combine 10sec/speed4.
  4. Scrap down sides of bowl and mix 1min/speed 4.
  5. Scrap down sides of bowl again ensuring all had been combined, then add boiling water and mix again, 20sec/speed 3.5 till incorporated. Note the mix will be very runny.
  6. Pour into prepared tin and place into a COLD oven. Then set the oven to 160°C and bake for approx 50-60 min. The cake will be cooked when a skewer inserted into the middle comes out clean or with a few light crumbs on it.
  7. Allow cake to cool in tin for 10 min before then removing and allowing it to cool completely on a rack.

Tip

This recipe make a single layer cake that can be cut in half and iced for a simple cake. For a taller more glamorous birthday cake (like the picture) make two of these cakes and stack them up. I cut each cake in half horizontally, making 4 layers total of cake.

You CANNOT double this mixture in the thermomix as its too much mix. I do though often double the dry mix then split it in half and proceed with the recipe for one cake, then make the second with the reserved dry mix.
