Gluten Free Chocolate Coconut Brownies

  • 100 grams chocolate, Milk, dark or combination
  • 200 grams Butter
  • 200 grams brown sugar
  • 4 eggs
  • pinch salt
  • 2 tablespoons vanilla essence
  • 80 grams cocoa powder
  • 80 grams Desiccated Coconut, plus extra for sprinkling on top
  • 130 grams sunflower seeds/pepitas, plus extra for sprinkling on top

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. Preheat oven to 160C and line a brownie pan with baking paper.


  2. 2. Place 100 grams of chocolate into clean and dry bowl. Blitz 10 seconds/speed 7.


  3. 3. Melt the chocolate 3 minutes/37 degrees/speed 3. Scrape down the sides of the bowl and extend the time by 1 minute if the chocolate isn't completely melted.


  4. 4.Add the 200 grams of butter, 200 grams of brown sugar, 4 eggs, a good pinch of salt and 2 tablespoons of vanilla essence. Mix 2 minutes/ speed 4 - mixture will lighten up and look fluffy.


  5. 5. Add 80 grams of cocoa powder, 80 grams of desiccated coconut and 130 grams of sunflower seeds. Mix 1 minute/ speed 3/Counter-clockwise operation. Give bowl a good stir and mix 1 minute/ speed 3/Counter-clockwise operation.


  6. 6. Pour into brownie tin and and decorate with diagnal stripes of coconut and sunflower seeds.


  7. 7. Place in the oven for 30 minutes.
