Gluten Free Sweet Pastry

Gluten Free Sweet Pastry

  • 400 grams gluten free flour plain
  • 1 tsp xantham gum
  • 2 tbsp icing sugar
  • 200 grams unsalted butter, chopped
  • 1 large egg
  • 160mL cold milk

Recipe's preparation

    1. Put the flour, sugar and xantham gum in Thermomix mixing bowl and mix 3 sec/speed 3.
    2. Add the butter and mix 5 sec/speed 5 until mixture resembles fine breadcrumbs.
    3. With the blade running add egg and milk. Shape into a flat square or round disc, wrap in cling film and rest in fridge for 1 hour before using.

Roll pastry thin to acheive a crispier texture.

    This is the most scrumptious pastry! I will not be using another recipe after trying this one! The secret is in having the pastry cold - I left in the fridge for an hour before rolling out. Then once the pastry was in the pie dish I chilled again before putting in the oven. Can't recommend this recipe enough.
