- 50 g raw sugar, (can use icing sugar)
- 200 g plain flour
- 125 g Cold Butter, cubed
- 250 g sugar
- Thinly peeled rind from 1/2 lemon
- 2 eggs
- 75 g lemon juice
- 35 g self-raising flour

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
- Preheat oven to 160 degrees.
Grease and line a square baking tin (approx 23cm).
Place raw sugar into bowl, mill for 10 seconds, speed 10 (if using icing sugar, just add to bowl).
Scrape bowl down. Add plain flour and butter. Mix for 10 seconds, speed 6.
Tip mixture into lined tin and press down firmly.
Bake for 15-20 minutes until straw-coloured.
- No need to clean bowl. Can prepare topping while base is baking.
Place sugar and lemon rind into bowl, mix for 8 seconds, speed 6. Rind should be finely chopped through the sugar.
Add eggs, lemon juice and self-raising flour. Mix 8 seconds, speed 6.
Pour topping over base. Bake for approximately 30 minutes, or until top is lightly browned.
Allow to cool then cut into squares.
Accessories you need
Caster sugar can be used instead of raw sugar.
