  • 260 grams SR flour
  • 130 grams brown sugar
  • 2 teaspoons ground ginger
  • 1/2 teaspoon baking powder
  • 130 grams Butter
  • 1 egg

Recipe's preparation

  1. Pre heat oven to 160deg

    Prepare baking dish

    Add flour, brown sugar, ginger and baking powder to jug mix speed 6 / 6 sec

    Add butter, egg and golden syrup speed 6 / 6 sec

    Slowly add the milk while mixing speed 6 / 1 1/2 minutes

    Cook for 45 minutes or till skewer comes out clean

Tip

For the golden syrup I use Lyle's Golden Syrup - it is an english brand of syrup and lighter in colour.

I tend to add more syrup and ginger than stated only as my grandma did it that way

With the milk some like to add more but I always go by looking at the mixture for the texture I like.

The secret with a sponge is in the mixing thats why the longer mixing time. the longer you mix a sponge the more air is added to it and comes out fluffy.

  • Nice flavour but not a sponge

    Nice flavour but not a sponge cake in the sense of a normal sponge. Texture is more like a butter cake not light and fluffy. Still a nice cake though.
