Greek Easter Biscuits

Ingredients

Biscuits

  • 500 grams plain flour
  • 2 eggs
  • 150 grams sugar
  • 175 grams Butter
  • 30 Lemon or Orange Juice, mls
  • 15 grams baking powder
  • gram Orange or lemon, grated

Egg Wash

  • 1 egg
  • 1 tablespoon water
  • vanilla essence, A few drops

Recipe's preparation

    Biscuits
  1. Pre heat oven to 180 degrees

  2. Beat butter and sugar till light and fluffy speed 3, for 40 sec.

    Add eggs one at a timne thro hole, speed 3 for 3-4 mins.

    Add the orange or lemon rind, and  juice. mix 15 sec, speed 3

    Mix speed 3 till combined.

  3. Add Flour and baking powder to butter mix.

    Combine Dough mode 1 min

    This will now be a soft dough

  4. Take small balls of dough 1tbls and roll into long snakes and then shape biscuits into a plait.

    Place on baking tray and brush with egg wash.

    Put in oven for 30 min's or till golden brown.

Tip

This is half the recipe! It make load of biscuits. You can dbl.

Dont over work the dough

You can really shape the dough any shape you like. This is a more traditional way.

Keep in an air tight container.

  • I've made these twice now.

    I've made these twice now. First time was better but the second time it was hard to roll them without them cracking a bit. Maybe I need to reduce the amount of flour?   Some of the changes I made include. Mixing in the eggs for 2.5 mins and event that seemed like ages. Adding 2 teaspoons of baking powder as 15g sounds like heaps! 

    These taste really nice and sweet though, despite being a little harder to roll so turned them mainly into shorbread cookies.
