Healthy Banana Muffins

  • 3 overripe bananas
  • 80 grams coconut oil melted

Dry Ingredients

  • 170 grams Wholemeal SR Flour
  • 1 teaspoon baking soda or bi carb soda
  • 2 tablespoons brown sugar, or Rapadura Sugar (Optional)
  • 2 tablespoons or 40g Dark Choc Bits, or Cacao Nibs (or blueberries!)
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon Nutmeg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Easiest and most delicious muffins ever!
  1. Preheat oven to 160 degrees celcius (fan forced).  Grease 12 hole muffin pan or use silicone liners.

  2. Combine eggs, bananas and coconut oil in bowl - mix for 5 seconds on speed 4.  Scrape bowl if needed.

  3. Add all of the dry ingredients.  Mix for 5 seconds on REVERSE Counter-clockwise operation on speed 4.  Scrape down bowl if needed.

  4. Divide batter between muffin cases and bake for 12-15 minutes or until golden brown and bounce back when touched in the middle.

  5. Turn out onto tray to cool, and enjoy!

Tip

These super simple and healthy muffins are a regular in our house - because they are so versatile.  For extra crunch, add walnuts or nut of choice.  For extra nutrition, add a tablespoon of chia seeds.  For less sugar, omit the sugar (they still taste fab!).  For less sugar again, swap choc chips with cacao nibs.  For a fruity change - swap the choc chips with frozen for fresh blueberries or mixed berries.  Adding 1/2 a cup of dessicated or shredded coconut also makes a delicious addition.  Experiment and see what tickles your fancy!!

    The best muffin recipe. So great to finally find one. As everyone has said, lovely and fluffy. I just used bananas and turned out great. My son is allergic to egg. Even using egg replacing turned out well.

    Delicious and more healthy than the regular muffins in my house! I swapped the sugar for 1tspn honey, but next time I'll use 2tspn. Still delicious, but I have some sugar fiends to feed!

    I experimented with a little dessicated coconut, which gave them some texture -I'll use more next time.

    Frozen blueberries worked a treat instead of choc chips for a healthier recipe, as suggested.

    I used spelt flour by mistake, so added a tspn of baking powder in addition to the bicarb soda, and these rose perfectly.

    Absolutely delicious! Changed the sugar to 2 tbls of 100% maple syrup, added chia seeds and gluten free chocolate chips. Kids 3 & 5 and hubby loved them!

    Had some very ripe bananas to use and wanted to make some healthy muffins for school lunches. I used coconut sugar and blueberries. Not too sweet, just perfect. Will be my new go to recipe for lunchboxes. I had one for morning tea too. Really yummy!!!!

    I can't believe how fluffy these are! I followed the recipe exactly and they are yum! Next time I'll omit the sugar & just use honey... I did add some flaked almonds and also some rolled oats to the top before baking.

    Made these into mini breakfast muffins. I didnt add chocolate bits but added 1/2 cup dessicated coconut. They turned out great, so fluffy and delicious tmrc_emoticons.) i'll freeze them individually and grab one out for brekky on the go. Thanks heaps. Will definitely make again
