  • 170 g pitted dates
  • 4 tsp instant coffee
  • 160 g boiled water
  • 1 level tsp ground cinnamon
  • 70 g coconut oil
  • 0.5 tsp bicarbonate of soda
  • 60 g Coconut sugar
  • 30 g Maple syrup
  • 2 eggs
  • 140 g self-raising flour
  • 40 g LSA mix
  • 0.5 tsp baking powder

Icing

  • 1 cup icing sugar
  • 40 g Butter, Soft to room temperature
  • 1 heaped teaspoons instant coffee granules, Melted with boiling water to make a paste
  • 60 g cream cheese, Soft to room temperature

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    CUPCAKES and ICING
  1. [size= 12pt]Preheat over to 180. Line a muffin tray x 12 with papers or grease. Make up coffee by mixing with boiling water. [/size]

    [size= 12pt]Place made up coffee, cinnamon, dates and bi carb in thermi bowl. Allow to sit for 3 to 5 mins. Blitz 10 secs, speed 9. Scrape down sides. [/size]

    [size= 12pt]Add all remaining ingredients and blitz 15secs, speed 5. Pour into muffin tray and bake 15- 17mins. [/size]

    [size= 12pt]Chop handful walnuts up (I do this by hand while muffins cooking). [/size]

    [size= 12pt]Icing - Add icing sugar and coffee paste to thermi bowl and blitz 10 secs, speed 9. Scrape down sides. Add butter and creamed cheese. Blitz 10 secs, speed3. Scrape sides and repeat if necessary to make a smooth icing. Top cooled cupcakes and sprinkle with walnuts.[/size]

Coconut sugar could be substituted with Brown or raw sugar
