Honey and Date Loaf

  • 200 g pitted dates
  • 100 g Honey.
  • 300 g Milk
  • 1 tsp bicarbonate soda
  • 30 g rolled oats
  • 270 g Self Raising Flour
  • 1 egg
  • 1 tsp Vanilla Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre Heat oven to 160.

    Place dates in TMClosed lid 20secs/sp 9. Add Honey 2mins/75 degrees/sp 4. Add bicarbonate soda 5secs/sp4. Add milk and egg 5secs/sp4. Add SR Flour, rolled oats and vanilla 20secs/sp7.

     

    Place in loaf tin and bake for 40 - 45mins depending on oven.

Tip

Can use any type of milk.

Can use cinnamon in place of vanilla.

    Absolutely delicious and devoured straight up. I swapped out half the honey for golden syrup and added probably an extra 20-30g of dates, plus baked for maybe 50-55 minutes. Turned out perfect and will definitely be a regular in our house! Thank you for the great recipe tmrc_emoticons.-)

    Lovely recipe. I made it with rice malt syrup (as one of the previous bakers) and it was a great sugar free loaf. More of a 'date bread' than cake so delicious with some butter on. Exactly what I was looking for to put in the kids lunch boxes. Thank you for fabulous recipe!!!!

    Found the dates became a thick paste in the TM31 so will reduce to 10 to15 secs next time. Only had 80g honey left but think it would have more flavour with 100g. Will definitely try again.

  • Lovely flavour & light

    Lovely flavour & light texture although mine was slightly undercooked in the centre after 45 minutes.  I used a mix of dates and sultanas and substitued 30 grams of flour with LSA.  The dates end up quite finely chopped so need to make sure the bowl is scraped down before adding other ingredients.  Thank you for the recipe.

    Just made this and it has turned out tough and rubbery. I followed the directions exactly so not sure why this has been such a fail. I bake every week so not new to this and this is the first fail I've had.
