Ingredients

Hot Cross Muffins GF & DF

  • 250 grams Almond milk
  • 1 --- egg
  • 60 grams olive oil
  • 2 teaspoons Baking Powder, gluten free
  • 20 grams apple cider vinegar
  • 100 grams sultanas
  • 2 teaspoons cinnamon, Ceylon
  • 1 teaspoons ground allspice
  • 1 pinches ground nutmeg
  • 1 pinches clove, ground
  • 3 tablespoons Coconut sugar

Flour Blend

  • 75 grams almond meal, 1/2 cup
  • 75 grams tapioca flour, 1/2 cup
  • 90 grams brown rice flour, 1/2 cup
  • 90 grams buckwheat flour, 1/2 cup

Cross Mixture

  • 2 tablespoons buckwheat flour
  • 1 teaspoons Coconut sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Muffins
  1. Mix all ingredients except flour blend and crosses mixture for 20 seconds Speed 4.
    Add flour blend and mix 10 seconds Counter-clockwise operation Speed 3.
    Pour batter into silicone muffin trays, you should get 10 1/2 cup muffins from this recipe.
  2. Crosses
  3. Add a small amount of almond milk to the flour and sugar ina small bowl. Make crosses by rolling a small amount between your hands or on a clean benchtop. Place crosses onto the muffins.
  4. Bake
  5. Place muffins into a preheated 180c oven until browned on top and bouncing back when pressed. Depending on your oven 30-40 minutes.

Tip

Milk and flour blend used can be changed to your preference, just stick with 250 grams of milk and 2 cups of flour.

    Great recipe, thank you Smile. I made a few swaps: 1 tbsp ground flaxseeds & 2 tbsp water for the egg, 50g pitted dates & 70g DF chocolate for the sultanas and white rice flour instead of brown. The muffins rose well and were delicious to eat.
