Jam Drops (Egg-Dairy-Soy-Gluten Free)

Ingredients

25 piece(s)

Jam Drops

  • 100 grams almonds
  • 50 grams Coconut, Shredded or Flaked
  • 180 grams brown rice
  • 1 teaspoon Baking Poder (gluten free)
  • 4 tablespoons coconut oil
  • 3 tablespoons honey
  • 1 tablespoon chia seeds
  • 3 tablespoons warm water
  • 2-3 tablespoons Jam (gluten free), e.g. apricot, strawberry, raspberry

Recipe's preparation

    Chia Seed Egg
  1. 1. Place chia seeds into MC

    2. Turn up to sp.9 and with blades rotating, pour chia seeds into bowl for 20sec

    3. Set aside with warm water

     

  2. Oven
  3. Preheat oven to 180'C

  4. Dry and Wet Ingredients
  5. 1. Place brown rice into TM bowl, mill 40sec/sp.9

    2. Add almonds into TM bowl, mill 10secs/sp.7

    3. Add shredded or flaked coconut into TM bowl, mill 3secs/sp.7

    4. Add baking powder, coconut oil, honey and chia seed egg into TM bowl; mix 1-2mins/sp.5

  6. Assembly
  7. 1. Once combined, mixture should be sticky enough to form into 1 heaped teaspoon balls

    2. Place on baking tray, gently use a fork to flatten and make an indent in the centre with a finger

    3. Place a drop of jam to the indent (as much or as little as you like)

    4. Bake for 15-20mins or until golden

    Made these for my son who is on a break from dairy and egg in his diet. Once you get over the initial fact that these are not as sweet as a normal jam drop, they are a really yummy biscuit.  No refined sugar is an added bonus! Definitely doing to be a regular in the household.

    Thanks for the feedback Rebekah, I am glad you kids loved it!  I have updated the recipe instructions to include the baking powder now.

    The kids selected this and loved it. Realised I had no chia seeds once I had started, so just replaced with a real egg white.. Worked out great. The recipe doesn't say when to add the baking power- so don't forget ittmrc_emoticons.)
