Jam fancies: Basic butter biscuit Dough
- 150 g sugar
- Rind of 1 Lemon
- 150 g Butter, chopped
- dash vanilla extract
- 1 tablespoon Milk
- 2 eggs
- 400 g plain flour
- 1 tablespoons cornflour
- 1 level teaspoons baking powder
Jam filling
- 1/2-1 cup smooth jam of choice, e.g raspberry, strawberry

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Line several large baking sheets.
Preheat the oven to 180°C.
Blitz lemon rind and sugar 10secs/sp9.
Add the remaining ingredients to the bowl "Closed lid" .
Blend 30-40secs/sp4, using the spatula to help combine.
Transfer the mixture to the cookie press, select the appropriate disc/s and press onto the prepared baking sheet.
Make 1/2 in the "daisy" shape and 1/2 round as the bases. Sprinkle lightly with extra sugar if you wish.
Bake for 12-15 minutes until lightly golden.
Cool slightly on trays before cooling completely on wire racks.
Pipe/spread a small amount of jam onto the flat disc cookies and join with the "daisy"top. Set in the fridge to allow the jam to firm up.
