Lamington Cake - Susan Joy
Cake Mixture
- 6 eggs, Large eggs
- 180 g coconut milk, Or milk of choice
- 100 g Coconut sugar
- 120 g Ghee, Coconut oil or Butter
- 150 g almond meal
- 70 g Coconut Flour
- 1 1/2 tsp bicarbonate of soda
- 1 tsp Baking Powder, gluten free
- 1/4 tsp salt
Chocolate Frosting
- 100 g raw cashews
- 18 g cocoa powder
- 90 g coconut cream
- 52 g coconut oil
- 20g g honey
- 2 tsp vanilla extract

- Preheat oven to 170°C (340°F). Line a 22cm square cake tin with baking paper.
Mix Wet Ingredients
Add to bowl: eggs, cashew milk, coconut sugar, ghee, and vanilla.
Blend: 10 sec / speed 4, then 5 sec / speed 6 until creamy and sugar is mostly dissolved.
Add Dry Ingredients
Add almond meal, sifted coconut flour, baking soda, baking powder, and salt.
Mix: 10 sec / speed 4. Scrape down sides.
Mix again: 5 sec / speed 4, or until fully combined.
Bake
Pour batter into prepared tin. Smooth top with spatula.
Bake for 30 minutes, or until cake springs back in the center and pulls away from the sides.
Cool in tin for 20 minutes, then invert onto a wire rack to cool completely. - Soak Cashews
Soak cashews in filtered water with a pinch of sea salt for 45–60 minutes.
Drain and rinse thoroughly.
Grind Cashews & Cacao
Add soaked cashews and cacao powder to bowl.
Blend: 20 sec / speed 8. Scrape down sides.
Repeat if needed until finely ground.
Add Remaining Ingredients
Add coconut cream, coconut oil, honey, and vanilla.
Blend: 30 sec / speed 7. Scrape down sides.
Blend again: 20 sec / speed 8, or until smooth and creamy with no bits.
Chill to Set
Transfer to a bowl and refrigerate until firm but still spreadable (about 15–20 minutes).
