Lemon & Chia Protein Cookies
- 1 Peel of whole lemon (no white pith)
- 500 g almond meal
- 125 g dessicated coconut
- 1 scoops Vanilla Protein Powder
- 1 tablespoons chia seeds
- 2 tablespoons coconut oil, (extra virgin), melted
- 1.5 tablespoons lemon juice
- 2 tablespoons Rice malt syrup

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Preheat oven to 180°C and line baking tray.
- Place lemon peel in TM bowl and chop for 3 seconds / speed 7.
- Place all remaining ingredients in TM bowl and mix for 30 seconds / speed 3.
- Using a tablespoon as a measure, scoop out and roll into a ball. Place onto the baking tray and press gently flat.
- Bake for 10-12 minutes until golden.
- Allow to cool on a wire rack. Store in an airtight container.

Add a commentThe cookies we made were quite dry and didn't have...
The cookies we made were quite dry and didn't have much flavour. The TM6 stopped mixing and provided an error message something like 'motor overload' so we wondered if the amount of almond meal was correct as it was very dense although it did roll into balls quite easily.
