Lemon Coconut Truffles (paleo, grain-free, gluten-free, vegan, dairy-free, egg-free)

Ingredients

18 portion(s)

Truffle mix

  • 70 g Desiccated Coconut, + extra for rolling
  • 80 g raw almonds
  • juice and zest of 1 lemon
  • 1 teaspoon vanilla essence
  • Pinch salt
  • 30 g Raw macadamias
  • 4 tablespoons honey, (Or 5 tbsp maple syrup for vegan option)
  • 4 tablespoons coconut oil

Recipe's preparation

  1. Put all ingredients into mixing bowl and mx:

     

    10sec speed 4, 10sec speed 6, 10sec speed 8

     

    Scrape down sidesdown sides 

     

    Blend 30 sec speed 9

     

    Roll mix into tablespoon sized balls, then roll in coconut.

     

    Best stored in the freezer.

    Noice. Very noice.

    Just made a batch - halving the coconut oil and honey. Consistency was spot on for rolling, but did have to scrape down sides often when blending.

    The yield for the recipe was a bread and butter plate full of balls (approx. 3cm diameter.)

    Think I'll try halving the lemon juice and rind next time, and add some dried apricots as a bit of a variation.

    I wish I had read the comments before making. Flavour is amazing but mixture is totally runny. I added another 30 grams of maccadamias, 30 grams of almonds and 10 grams of coconut but still much too runny to roll into balls. I lined a tray with glad wrap and made it a slice instead. I wonder if the recipe is meant to read 4tspns of honey and 4 tspns of coconut oil (instead of tablespoons)? I might try this. Fantastic flavour though.

    Have these setting in the freezer, the mixture was reallllly runny, maybe I had a big lemon? So I added mesquite, lsa and coconut flour and then the consistency was better. Nice and lemony!

    These are so good, I added 2tbs of vanilla protein powder and reduced honey to 2tbs instead of 4. Mixture turned out great, such a nice change from chocolate protein balls. Recipe definitely a keeper

    Did half a batch to try them out and they are delicious thank you!  My mixture was very runny so I added a little bit of coconut flour and another handful of almonds and macadamia's, also upped the lemon zest a bit.  I have to stop myself eating them all!  Thank you for a great recipe tmrc_emoticons.)
