  • 1 lemon, juice & zest only (no white pith)
  • 110 grams raw sugar
  • 60 grams Butter, softened & cubed
  • 2 tablespoons extra virgin olive oil
  • 1 egg
  • 150 grams plain flour
  • 80 grams semolina
  • 1 teaspoon baking powder
  • pinch salt
  • icing sugar, dusting only

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre-heat oven 180C (160C fan forced).

    Add lemon zest and raw sugar into mixing bowl and chop 10 seconds/speed 9.  

    Add butter to mixing bowl beat 1 min /speed 6 (may need to scrape down sides throughout).

    Add oil, juice and egg mix 3 sec / speed 6.

    Add flour, semolina, baking powder and pinch salt mix 5 seconds/Reverse/speed 3.

    Refrigerate 30 minutes.

    Roll heaped teaspoons into ball and bake on tray for 12-15mins.

     

    Allow to cool and serve with a dust of icing sugar.

    Hot out of the oven and taste very nice. Easy to make although at bit sticky to roll so I should have left the mix longer in the refrigerator. Thank you for the recipt.
