  • 225 g rich tea biscuits
  • 115 g margarine, (Flora is recommended)
  • 1 lemon
  • lemon food colouring, (optional)
  • 85 g Desiccated Coconut, (plus extra for decorating)
  • 200 g condensed milk, (1/2 tin)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Firstly make icing sugar. Place sugar in bowl. Mix sp. 10 / 2 mins[/b]. Remove from bowl. Whilst making icing sugar, zest 1 lemon.

  2. Place biscuits in bowl. Mix Sp. 5 for 10 seconds[/b]. Add coconut and mix Sp. 2 for 3 secs[/b]. Remove and place in large bowl.

  3. Place margarine in bowl. Mix 55°C / Sp. 2 / 1 min[/b]. Then to flick margarine remains from blade turn to Sp. 4 for less than a sec[/b].

  4. Add condensed milk and lemon rind to melted marg and mix Sp. 3 / 10 secs[/b].

  5. Pour out into biscuit mixture and mix thoroughly by hand.


    Fits a square tin, lined (approx. 10 in). Put it in the fridge whilst making icing.

  6. To make icing, place icing sugar in a medium sized bowl. Add juice of 1 lemon, well strained (and a few drops of food colouring, if using) and mix by hand with a small whisk. Pour on top of chilled base and sprinkle desiccated coconut on top.

NB: If making double (to use 1 tin of condensed milk) do each step twice; do not double the quantity as it will chop irregularly.[/b]
