Ingredients

Base

  • 200 g Milk biscuits, or similar
  • 2 tbsp pecans, or other nuts
  • 40 g sugar, optional
  • 1/4 tsp cinnamon
  • 125 g unsalted butter

Pie

  • Zest of 3 Limes
  • 125 g lime juice
  • 3 egg yolks
  • 1 cans sweetened condensed milk

Recipe's preparation

    Base
  1. Place all dry ingredients into jug.
    Blitz 4s speed 7 until it resembles breadcrumbs.
  2. Cut butter into cubes and melt in microwave.
    Add butter to dry ingredients.
    Mix 10s speed 4, or until mixed.
  3. Grease and line 20cm baking tin.
    Press mixture into tin.
    Bake in oven at 175 for 10 minutes.
    Remove from oven and allow to cool.
  4. Pie
  5. Use vegetable peeler to lightly remove the zest of limes. Place in bowl and blitz 5s speed 10 or until finely grated.
    Set aside (easiest later if placed into a small jug).
    Rinse and dry mixing bowl.
  6. Juice 3 limes (or as needed for 125g of juice).
    Add to lime zest.
  7. Insert butterfly whisk.
    Add egg yolks.
    Beat 2 min speed 4. If egg yolks are not at room temperature, set temperature to 37.
  8. Add condensed milk.
    Beat 2 min speed 4. This can also be warmed to 37.
  9. Mix at 0.5 while slowly adding all remaining ingredients. Once they are added continue stirring for 2 minutes.
  10. Pour onto base.
    Bake in oven at 170 for a further 15-17 min.
    Allow to cool for at least 2 hours (and preferaby over night) before cutting into squares and serving.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
