      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. 1. Line a large baking tray with baking paper and preheat oven to 180°C.
    2. Zest your lemons in a bowl and set aside
    3. Put butterfly whisk into Closed lid. Add egg whites in the Closed lid and whip on speed 3.5/3-4 minutes. Keep a close eye on your egg whites to be sure not to overwhip. Remove butterfly whisk.
    4. Add caster sugar and mix on speed 3/30 seconds.
    5. Add limoncello and the lemon zest you previously set aside. Mix on speed 3/10 seconds.
    6. Add almond meal and mix on speed 4/20 seconds or until combined. The dough should be thick and very sticky.
    7. Using a teaspoon, scoop out the dough and roll it using your hands into a slightly flattened ball shape (yes, this is messy). Place on the tray not too close together, allow room for the biscuits to expand slightly.
    8. Bake in the oven for 15 minutes, until light golden brown.
    9. Dust with icing sugar to serve

Tip

These biscuits are super quick and easy and so tasty!

Crunchy on the outside and soft on the inside, they are so light, delicious and a crowd favourite.

Don't double the recipe as it cannot all fit in the Closed lid unfortunately.
