If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1.Pre-Heat your oven to 170 degrees and line a 20cm square cake tin with baking paper, making sure to leave plenty of paper hanging over the sides.
- 2.Insert butterfly , Separate your eggs and place the egg whites into a CLEAN and DRY bowl –Set yout TM for 3-4 minutes at speed 3.5 (or until stiff peaks form). Set the egg whites aside until needed.
- 3.Remove butterfly.Place butter in TM - set it for 3 mins , 60 degrees at speed 2.
- 4.Place the egg yolks and caster sugar together in the TM Bowl , beat the mix for 20 secs on speed 4, the mix should now appeara little frothy.
- 5.Set the TM now to continually mix at speed 2- 3 and add the vanilla extract then add the flour a few spoonfuls at a time.
- 6.Gradually add the lukewarm milk and continue to beat on speed 2-3 to combine all of the ingredients.
- 7.Add the egg whites to the bowl and gently fold together the mixture by setting the TM to reverse for 15 seconds.
- 8.Pour the batter into your prepared cake tin and place into your preheated oven and cook for 35 minutes or until a golden crust has formed on top of your cake.
- 9.Dust the top with icing sugar and serve

Tip
The butterfly will be needed in step 2.
I initially used a lamington sized tin which is why my picture appears more like a slice than a cake.

The recipe worked for the most part, although I did need to bake for 20 mins longer before it was set. It was too eggy-tasting for me, but those who like that will probaby enjoy this cake. I reduced the sugar to 100g and still found it sweet. I enjoyed trying out something new but it's not quite to our family's taste. Thanks for a clear and easy to follow recipe.

pr0nty:when you have to incorporate whipped egg whites into a mixture, start with a third of the whites and mix with a whisk to start the process. Then add the rest and fold through with a spatula. This should give a better more evenly mixed result.

This was great - i was a bit
This was great - i was a bit nervous after reading some of the reviews but all fine (and delicious!) in the end.
However I did cook a further 20mins, and a speed for folding the egg whites through wiuld have been good. I tried about 1 but that was ineffective, and 4 seemed a bit brutal. I ended up using spatula to do it manually but wasnt sure if i was meant to be getting rid of the clouds or not. In the end i mostly did and it turned out fine I think, so...?

Is the oven temp fan forced or regular, I have a very dodgy regular oven which heats 20 degrees hotter than selected.

I all so needed to cook mine for a little longer plus needed to fold through teh egg whites for a little longer.

At the end of the recommended cooking time, mine was also too wobbly. But it was an easy fix by turning the oven off and leaving the door slighty ajar and I left it to set in the residual heat of the oven. Was yummy and a winner with my kids. Wondering how it will taste cold. Also, the reverse didn't combine the egg whites for me either. I just folded them through with a spatula in a mixing bowl. Just warning everyone, the mix is very wet and runny and it looks like it won't work, but it does.

Made using GF flour and it
Made using GF flour and it came out a treat--very yummy. Slight hiccup during step 7 as the egg whites sat on top of the mixture and didn't blend, so I poured everything into a mixing bowl and folded them in myself as best I could. I also cooked for an extra 15 minutes before it was set. Having said that, I would make it again. Thanks!

I added 10 mins cooking time. It was quite brown on top. I sprinkled it with a little nutmeg and cinnamon sugar. My 2yo almost inhaled and hubby wanted more. So.....what looked like what was going to be an epic fail...ended up great!!!!!! SOOOOO, if yours looks lumpy, bumpy and not what you expect - just cook it!!! It didn't finish up that way!! THANK YOU

Hey, singingsoul, hope might not be lost! I cooked mine for an extra 15 minutes because it still wobbled like it was practically liquid after 35. But it was quite "set" after the extra 15. And despite the top looking almost like an apple crumble, I've just cut it up and it has worked after all! Here's how it has ended up looking:
It tastes delicious and not at all eggy like I was dreading. I hope yours ends up turning out as well! Crossing my fingers for you.
EPIC FAIL.....I was so
EPIC FAIL.....I was so excited to try this! However, mine is exactly the same as pr0nty. The same issues with folding as no speed was specified. I just checked the oven and, with 10 mins to go, it is clearly burning on top, inconsistent and runny underneth. I followed the instructions as written. I think I need more than fingers crossed for this one now.

I've just made this but I don't think it's worked. When it came to the last step of adding the reserved egg whites back into the bowl and mixing on reverse (at what speed, by the way? I used 2.5 as per previous step), the egg white just sat in a big lump on top of the mixture and didn't move. I poured it all into a bowl to fold it in myself, but because the mixture was so thin, the egg whites only really broke down into lumps and didn't bind anything together. It looked like this:
So it's in the oven, but I'm not holding out much hope. The top is browning but in that uneven, egg-whitey way. Any ideas where it's all gone wrong?

I have updated the "dodgy" instructions to make it easier for people to follow. The cooking time worked fine for me which is why I posted it as such, every oven is different , maybe your pre heating was shorter or longer than mine. I'm just happy some people are being positive about my recipe

Edit: cooked for 35 minutes and was still way too watery, so I cooked it for about another 17-20 minutes, and it seems to have come out okay with a beautiful golden crust on top.

Shame about dodgy instructions ie when to put in and take out butterfly, no step numbers yet refers to step 2, there was no froth as expected..... BUT mixture tastes lovely and now in the oven cooking. Concerned as its very runny for a cake batter tho, will 35 minutes do it?

It was delicious, however after mixing the eggs and sugar in the tmx it wasn't at all frothy. Also I had to cook it for just over an hour before it was cooked. Taste wise though, a big thumbs up from everyone in this house.
