Mamma's Chocolate Mudcake

  • 270 g white sugar
  • 125 g unsalted butter

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. Preheat oven to 180C. Weigh sugar into mixing bowl and mill 10seconds/speed 10
  2. Scrape down sides of mixing bowl.
  3. Add Butter and cream on 20 Seconds/Speed 5
  4. Scrape down sides and repeat 20 seconds /speed 5
  5. Add in eggs and cocoa powder. Combine 10 Seconds/ Speed 5.
  6. Scrape down sides of bowl and repeat previous step.
  7. Weigh in flour, bicarbonate soda, salt, milk and vanilla essence. Combine 20 seconds/Speed 5
  8. Scrape down sides and mix 5 seconds/ speed 5
  9. Pour into cake tin and cook for 1hour.
  10. Remove from tin and place onto a chopping board, cover in gladwrap to keep moist as it cools. Serve with chocolate icing, cream or chocolate ganache.

Tip

Place upside down on a chopping board before covering in gladwrap to flatten the round top. This is best for making layered cakes.
