Banana Bread

  • 260 g Self Raising Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 75 g softened butter
  • 1/2 tsp salt
  • 250 g sugar
  • 2 eggs
  • 1 tsp vanilla
  • 4 tbsp sour cream
  • 4 large ripe mashed bananas

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dry Ingredients
  1. Pre-heat oven 180c, Line baking pan with baking paper

    In a separate bowl, sift flour, baking soda and baking powder
  2. Wet Ingredients
  3. In Closed lid add butter, sugar and salt, 20 seconds/speed 4,

    Scrape down sides of bowl,

    Add eggs, vanilla and sour cream, 30 seconds/speed 3,

    Scrape down sides of bowl,

    Add dry ingredients, 40 seconds/speed 4,

    Add mashed bananas, 40 seconds/speed 3,
  4. Bake
  5. Pour batter into pan, Bake for 1 hour or until cooked

    Delicious! Quick and easy as well. My four teenagers devoured this before heading to their footy/netball. All good reviews from them as well as friends at footy that tried it. I used two loaf pans.

    Very nice banana bread. I didn't have sour cream so used the TM to make some. I also added about 90g of walnuts. Very nice, will definitely make this one again. Also, I used spelt flour.

    This was super yummy! Whole family loved it. I had 9 bananas needed to use so we made some banana custard to go with it. Made a delicious dessert.
