Moist Vanilla mud cupcakes

Ingredients

Batter

  • 100 g SRF
  • 100 g flour
  • 120 g Butter
  • 150 g raw sugar
  • 2 large eggs (room temp if possible)
  • 110 g full cream milk
  • 1 heaped teaspoon of vanilla extract or paste

Recipe's preparation

    Cake:
  1. 1) Add butter and sugar and mix 20 sec/ sp 5

    2) With blades rotating on speed 4, add the 2 eggs one at a time until mixed slightly (roughly 10 seconds)

    3) Add flours, milk and vanilla extract and mix 30 sec / speed 6

    4) Add to silcon moulds, cupcake tins and cook in 180 degree fanforced oven for 15-20 mins until skewer inserted comes out clear

     

    ICE WITH FAVOURITE ICING:

    Buttercream, cream cheese icing or decorate with fondant for birthday parties

    i use this as my base vanilla cupcake recipe now, add apple and cinnamon, choc chip, raspberries, strawberries, may need to add less milk and more SR flour if doing so, but so worth it

    Thanks for the recipe.  I made a double batch with only 95g of sugar and they worked out beautifully.  A hit for the school birthday cupcakes.  Yum!

    Great recipe. After reading the other comments, I only used 50g of sugar because I used strawberry milk instead of plain. I made 18 x small cupcakes in free-standing cardboard patty tins and they turned out perfectly!

    I cooked them for about 18 minutes.

    So glad you loved them..yes I drop the sugar too as needed but this was the amount in the recipe i converted. I often do 100g x good to know they are still yum with 75g love how we have control with our thermies. thanks for commenting
